Is "Crock Pot" one word or two? I couldn't remember.....so I'm going with two. :)
If you are like me, when you get home from work at night, you feel like you are running a million miles a minute to get everything done before bed. Cook dinner, load dishes, clean kitchen, do/fold laundry, bathe kids, get clothes ready for work the next day....try to squeeze in a little Big Brother and next thing you know its sleepy time. I LOVE to cook, but its hard to find the time on weeknights to cook my Bettylicious specialties with all that other stuff going on. This is why I love finding a good crock pot (crockpot?) meal. Start it before you go to work, and when you get home, voila.......DINNER'S READY!
I stole this from another blog, but it was so easy and so good I have to re-post. Its so easy, you don't even have to cook the lasagna noodles! It makes a good bit, so be prepared for leftovers. Strangely enough, Italian food is one of the only things I will eat leftovers of, so it worked great for us!
CROCK POT LASAGNA
You'll need:
1 lb ground beef
1 onion, finely chopped
2 teaspoons minced garlic
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 teaspoon salt
1 teaspoon dried oregano
1 (12 ounce) package lasagna noodles
12 ounces cottage cheese
1/2 cup grated Parmesan cheese
16 ounces shredded mozzarella cheese
Directions:
1.In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well mixed. cook until heated through.
2.In a large bowl mix together the cottage cheese, grated parmesan cheese, and shredded mozzarella cheese. It's easiest just to mix it with your bare hands.
3.Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used. Meat sauce mixture should end up on top.
4.Cover, and cook on LOW setting for 4 to 6 hours.
